Just like fashion runways announce trends at the beginning of the year, color is also an element to follow worldwide. Last year's color was the green apple called greenery, but in 2018 the trending color is the ultra violet. If we add this color in the kitchen, we can predict the "healthiest year in history". I’ll tell you why.
Vegetables, tubers, grains and fruits with this color are full of healing powers. Wherever you put them they look spectacular, and if on top on that, they will keep up our health, we should eat them all year long.
In this category we find purple versions of cabbage, carrot, potato, cauliflower, beet, lettuce, onion, olives, plums, grapes, blackberries, radishes, blueberries, beans and even figs, among others.
These fruits and vegetables are usually full of antioxidants and nutrients that protect our cells and heal our bodies. It is said to help lower blood pressure, improve circulation, improve eye health, decrease the development of cancer cells and help with the inflammation of our body and organs in general.
So, if you need to make a salad, eat a fruit snack, roast some vegetables, make a smoothie or juice, sauté some veggies or prepare a soup or a puré, think about their ultra violet power and live a healthier life.
